

Chef and viral ‘Potato Queen’ Poppy O’Toole shares her secret to perfectly roasted carrots for your Sunday roast
No roast dinner is truly complete without a helping of veg on the plate, and carrots are always a firm favourite. Chef and viral ‘Potato Queen’ Poppy O’Toole insisted that carrots are an essential accompaniment to any roast dinner, particularly when they’re roasted alongside everything else.
However, to achieve the perfect roasted texture, Poppy abandons the conventional oven-roasting approach in favour of another beloved kitchen gadget. The chef’s go-to method relies on an air fryer instead. In a recent TikTok video, she said: “Also, on your Sunday roast, you’ve gotta have some sort of roasted carrot.
“So these are maple-roasted carrots. Again, all in the air fryer.”
Not only does the air fryer deliver an outstanding texture, but it also frees up valuable oven space for the other elements of your roast. Thicker carrots can be sliced in half or cut into smaller chunks.
There’s no need to pre-boil the carrots either; they can go straight into the air fryer with just a light spritz of oil. To draw out the carrots’ natural sweetness, Poppy rustled up a simple maple butter glaze using nothing more than melted butter and maple syrup, reports the Express.
Once the carrots have completed their initial cook, toss them in the bowl with the maple butter and coat them thoroughly in the glaze. Return the carrots to the air fryer and drizzle the remaining glaze over the top.
Poppy’s video has been viewed over 120,700 times, receiving 3,335 likes and 40 comments, at the time of writing. Caelumonoleo wrote: “I roast mine with maple and gochujang for a spicy kick.”
Anna simply said, “Oh I love it,” while another user commented, “Mouth-watering.”
Not everyone appeared persuaded by Poppy’s flavour selection, with Jon saying: “That. Let it cool down a sec…. they do look good, I’m not sure about maple syrup. But I will try it.”
Poppy replied: “Love a lil added bit of sweetness.”

Maple-roasted carrots
Ingredients
- 300g carrots, peeled and halved if thick
- 50g melted butter
- 50g maple syrup
- Olive oil, salt and pepper
Method
Place the carrots into the air fryer basket and spray with olive oil. Season liberally with salt and pepper, then roast in the air fryer for ten minutes at 180℃ .
Combine the melted butter and maple syrup in a large mixing bowl. After ten minutes, take out the carrots and coat them in the buttery maple mixture.
Put the carrots back in the air fryer and drizzle over the remaining buttery goodness, then cook for another 10 to 15 minutes.
Serve with a sprinkle of flaky salt and drizzle over any butter from the bottom of the basket.
